Vinification
Mechanical harvest at night to keep freshness. followed by sorting in the cellar.
Pre-fermentation maceration with pneumatic pressing.
Vinification takes place in concrete vats with fermentation at low temperature.

Tasting notes
It is pale yellow in colour with light and slightly greenish gold highlights. The nose reveals notes of exotic fruits such as pineapple and passion fruit. The attack is straightforward and round on the palate. A well-balanced white wine with a long-lasting minerality and fruitiness.

Food and wine pairing
Very pleasant with oysters and seafood.
A perfect accompaniment to baked or tartare white fish .
