Vinification
Sorting, vinification in stainless steel vats, fermentation at low temperature, long maceration longue, ageing in concrete vats (6 months).SO2 total 29 mg/l et SO2 Free 4 mg/l

Tasting notes
Sustained color. Complex and intense nose with aromas of black fruits, candied strawberries and caramel. Round and powerful attack, rich and concentrated wine. balanced structure while delicay and gluttony. Very good length in the mouth. A wine without sulfites or added inputs.

A coconut curry chicken dishCow’s cheese such as St Nectaire.

Rosé Wine

Vinification
vinification by bleeding and at low temperature.

Tasting notes
A slightly salmon peach colour. Blackcurrant fruit on the nose. Full-bodied and unctuous on the palate, with aromas of wild strawberries and blackcurrants. The finish is fresh and thirst-quenching.

Food and wine pairing
The ideal partner for your summer aperitifs.
It will also delight your table salads as well as tomato mozzarella burrata dishes. Excellent with Camembert cheese. it will also go well with a variety of sweet delights.

White Wine

Colombard-Sauvignon-Sémillon

Vinification
Mechanical harvest at night to keep freshness. followed by sorting in the cellar.
Pre-fermentation maceration with pneumatic pressing.
Vinification takes place in concrete vats with fermentation at low temperature.

Tasting notes
It is pale yellow in colour with light and slightly greenish gold highlights. The nose reveals notes of exotic fruits such as pineapple and passion fruit. The attack is straightforward and round on the palate. A well-balanced white wine with a long-lasting minerality and fruitiness.

Food and wine pairing
Very pleasant with oysters and seafood.
A perfect accompaniment to baked or tartare white fish .

Average yield of 50 hl / ha.
Sauvignon and Colombard

Vinification
Mechanical harvesting with sorting and direct pressing.
The first part of the alcoholic fermentation is done in vats at low temperature.
Before the end of this process the wine is cooled and filtered. Then a second fermentation takes place in tank. creating effervescence and the famous bubbles.

Tasting notes
A brilliant yellow colour with silver highlights. Nose with notes of citrus and white-fleshed fruit.
A sweet attack and ample with a fresh finish.

Food and wine pairing
This fruit driven sparkling wine will be the perfect drink for your aperitifs. Very pleasant with grilled fish. It will also delight you with fruit-based desserts such as apple or pear tarts.
